Seeing as Simon started the Xmas music thread... It's only 2 weeks til Christmas. In my family, that means getting very busy in the kitchen, preparing a feast of Christmas goodies. Like most Finns and Swedes, there is no shortage of comfort foods in the household. Last night we started by making 5lbs of Swedish meatballs.

 

I still have to crank out 4 or 5 batches of cookies, 1 or 2 batches of pulla (Christmas bread), pumpkin pie, turnip and squash casseroles, devilled eggs, etc...

From the store I need a supply of fresh nuts, ambrosia, and 3 or 4 types of sil.

 

This list does not include all the favourites that mother has started to prepare. She already started a week earlier.

We really don't do a lot. I make snickerdoodle cookies that everyone loves and Debbe makes this cranberry jelly stuff with some type of booze in it that's really good spread on cheese and crackers.

I do wanna try making shortbread cookies this year. My sister makes the BEST and I finally got her recipe.

My mom passed away 3 years ago and one of the things I did was get her recipe book. Holidays meant some home cooked treats! My favourite Christmas treat my mom made were mincemeat drop cookies. More of a cake than a cookie....here's the batch I made just yesterday

My mom also made an amazing merengue cream pie....it took lots of time and mistakes, but I finally figured it out. I now make this as dessert for turkey dinners at Thanksgiving and Christmas.

My favorite growing up was always my moms mince meat tarts. :worthy:

I know how you feel that was my mothers dish for me and my wife always made short bread cookies the old Scotch way from her Great grand mother that was passed down and now my daughter has promised to make some for her dad :angel::clapping: i can hardly wait :whistling::worthy:

Holy cow Cliff! Who knew you had that kind of talent! I guess we know who's makin dessert for our next gtg... where do you put the ketchup? LOL

Not fishin today so I made these up. Got this recipe from a Michigan Lady.

They got to be one of the best cookies I've put in my pie whole.

Real good Fruit cake, not the cheap one, is one of my fav.

 

MOLASSES CRINKLES COOKIES

½ CUP SHORTENING
½ CUP BROWN SUGAR
2 TBS. MOLASSES
1 1/8 CUP FLOUR
DASH OF SALT
1 EGG, BEATEN
1 TSP BAKING SODA
½ TSP. CINNAMON
½ TSP. GINGER
½ TSP. GROUND CLOVES

Cream Shortening, Sugar, Egg, and Molasses.
Add sifted dry ingredients. Mix well.
Chill dough. Roll into small balls, Walnut size.
Then roll in white sugar to coat.
Place on a greased baking sheet and bake in 375` oven
For 9 to 10 minutes, all depends the oven.

 

 

For a good batch of cookies I
4 X’s the ingredients as follows:

2 Cups Shortening
2 Cups Brown Sugar
8 Tbs. Molasses = ½ Cup
4 ½ Cups Flour
¼ Tsp. Salt
4 Eggs Beaten
4 Tsp. Baking Soda
2 Tsp. Cinnamon
2 Tsp. Ginger
2 Tsp. Ground Cloves

I use whole LB. of Shortening, then add a little extra ingredients.

 

I tell ya, those Mice-meat cookies look real good. :good:

My moms fruit cake, done from scratch, shes unable to make anymore re health

 

 

This is why when my mom passed away that I learned these recipes so I could pass them down to my daughter. :)

Hey fish farmer

 

Here's the recipe for the mincemeat drop cookies!

 

3 1/4 cups flour

1/2 tsp salt

1 tsp baking soda

1 tsp cinnamon

1 cup butter/shortening

1 cup sugar

1/2 cup brown sugar

3 eggs

1 tsp vanilla

1 1/2 cup mincemeat

1 cup raisins (optional)

 

Sift flour, salt, baking soda and cinnamon.

 

Combine butter, sugars, eggs and vanilla with mixer and beat well.

 

Add mincemeat and 1/2 the flour mixture and mix

 

Mix and add remaining flour mixture

 

Drop by teaspoon on greased cookie sheet.

 

Bake at 350 for 10 to 12 mins

 

Enjoy! These are my fav holiday cookie!

Two favourites of which I don't get anymore cuz the people who made them have passed.

 

#2 - Grandma's Shortbread cookies and a glass of milk.

 

#1- Cold Dog's Nose ,A tradition German treat with a lot of rum in it. And if anyone knows a bakery where you can buy it please let me know

No ketchup in these recipes. Lol

My absolute favorite treat during the holidays is my wife's oreo cookie truffles. She'll take an entire package of Oreos and chop them up in the food processor then add cream cheese icing and roll them up into balls that she dips in molten chocolate.......... MOTHER OF PEARL I CANT Wait!!!

I'll have to ask next time I go to Sigrids in Barrie. They must have some down there in KW.
