smitty55 Posted August 16, 2020 Report Posted August 16, 2020 So I've been seeing lot's of posts lately on the edible wild site that folks have been finding puffballs. Usually it's later in the summer or fall after wet cool weather but these recent rains have triggered them. My normal spot didn't have any but I did see some in a farmers field. Anyway out of the blue my daughter shows up with 3 puffballs for me, two were from a spot she had seen them last year and one was on a golf course they had played that same evening. I usually slice them in 1" pancakes and fry them like that but this time I tried something different and were they ever good. I still cut a thick slab but this time I cubed the pieces, gave them a quick sear in oil and then added a pile of my wild garlic compound butter. I'm doing them like that from now on. Dinner last night was venison back straps and Spanish onion finished with that same butter and two slices of cubed puffball. I know whats on the menu tonight again. 1

Great prices compared to buying the Seal a Meal rolls for sure. I just ordered the combo pack of 6 8" 50' rolls and 6 11" 50' rolls for $109 and free shipping. Should last for many years. 1

Glad I didn't wait, those combo packs are sold out but they still have rolls on sale. Bags seem fine, measured the thickness at .0012", about the same as the Seal a Meal. Only difference is that one side is smooth, similar to the premade bags I had bought before at Capital Cutlery so just have to make sure to put bumpy side up. 1

What difference does it make? Doug Doug the bumpy side creates the channels for air flow. When I used those premade bags it made a big difference in how well the vacuum worked. That's what they told me at the store and they were correct, at least for my Seal a Meal machine. 1

NOW I know why some bags seal right up and others don't seal worth a fart!!! This is wtih the Food saver brand rolls, that also have one textured surface I figured it had to be operator error but had not figured out what the error was! Thanks! Doug

Old Ironmaker Posted August 28, 2020 Report Posted August 28, 2020 From my sinuses being so bad and constantly breathing through my mouth I have lost 90% of my sense of smell and worse taste. I can taste sweet and spicy but that's it and that sucks. I quit smoking 7 months ago and lost 5 pounds, no appetite at all. Food has always been a very large and important part of my life, now it just disappoints me because I know how good it tastes but can taste a thing. You don't know what you have until you lose it. Enjoy all. 1

Enjoy all. In the same boat here, some of it is age related in males. Everything tastes better with Sriracha Sauce, I put it on everything, one of the few things I can taste 🤣 1

All mixed together with herbs and spices. The first 20 minutes in at 500 degrees to seer the skin. Then 4 hours at 350. Then 1 hour to rest. Call this pig in a blanket. Then onto the carving table We fed about 70 people most everyone brought sides. A great way to spend a day of cooking and street party. Dan. 1

But the diameter of the roll is too big to fit in my Food Saver!!! So luckily I had kept an empty cardboard roll and rolled a bunch of the bag material onto it so it would fit....

That is one hell of a cooked pork . Wait til Albert see this . LOL I fished this morning and came home to roast shepherd peppers for friends.

My butcher prepares mine and we cook it for 12 hours at 225. This one was 15lbs. when we put in buns we also add roasted hot banana peppers to “taste”. 1

akaShag Posted September 7, 2020 Report Posted September 7, 2020 So a number of weeks ago I decide to make pho with a couple wild turkey legs. I even remembered to take photos, and saw them today on my phone and hope I can transfer them here. It was a resounding success, even if I do say so myself. A lot of folks just breast out their wild turkey, but the legs make an exceptional soup, and with the spices like star anise make an excellent, flavourful pho. So I covered the legs with water and the various spices, then simmered them for a few hours. Then I let them cool and removed the meat from the bones and tendons. I added the rest of the ingredients except the rice noodles, then added the meat and the rice noodles and let the flavours all meld together. And it it was a real treat! It also freezes well, and I have had a couple servings since then. Nice and meaty, just the way I like it! Doug
