We had a taste test last year with walleye, pike and pearch, and walleye was the best by far - the whites and best tasting. Pike wasnt bad, but it would be a my first choice.
I love cuda fishing, you dont need anything too heavy.
Make sure you have leaders!

fast retrieves are key!
Make sure you wash the salt out of your reels after each use as well!
I use both, and dont notice a huge difference myself. Since I got a nice long rodcase, i stick to 1 piece rods.
The biggest problem I have with 2peice rods is that they often come apart while casting really hard.
If I had only one choase of all my rods and reels, i'd go with shimano Calcutta 251 with a 7foot medium heavy shimno Compre with 50lb PowerPro. I have caught dozens of species, fresh and saltwater and I love the feel and control of the combo.
Still got all 20 digits boys

As for the hooks, I was tired of people telling me I was hurtign the fish and would never put a hook in myself...

The rebel is a great camera, i am a huge fan of Canon Cameras in general.
If you are using it for fishing pictures, I recommend something a little smaller and waterproof like the olympus 720 - you can take photos underwater with it!
