KisrBerny
I love this traditional British Fish Batter from https://sweetandsavorymeals.com: Ingredients: 1 cup all-purpose flour 1 teaspoon baking powder 1 teaspoon salt 1 cup beer Instructions: In a mixing bowl, combine the flour, baking powder, and salt. Gradually stir in the beer until you get a smooth batter. Let the batter rest for at least 30 minutes before using. Dip your fish fillets into the batter and fry in hot oil until golden brown. Cornmeal and Beer Fish Batter. Edited April 5, 2023 by KisrBerny
Big Cliff
Last fall when I was at Eagle Lake, the guides tossed our walleye in Franks hot sauce, let the excess drain off then tossed it in Sysco dry batter and into a pan of hot oil. It was so good we asked them to forget about the sides, just do fish. It's not spicy frys up nice and crisp. Since then that is ONE of my favorites although I can't get the Sysco batter as I don't own a business and they don't sell direct to the public so I just make my own. Beans
A whole bunch of years ago at a GTG on Cooks Bay out from Gilford, Wil Wegman was the cook, he rolled the perch in Fish Crisp then in beer then in Italian bread crumbs then fried in cooking oil...Was very yum-yum After they ran out of beer (can you imagine ?) he used ginger ale...I have used 7-up and it was good... Headhunter
@Big Cliff your recipe reminded me of something we did on a fly in a few years back. Chunked up the fillets and marinated them in Franks over night. Wrapped in bacon and grilled on the BBQ. A few drops of Franks while they cooked. SirCranksalot
If you have never fried it w/o batter i urge you to try it. I pan fry mine just lightly coated with flour. Nothing much to detract from the great taste of fresh fish. My bud is gluten free so uses no coating at all,
glen
I cook fish many different ways. Type of fish changes the coating. Rainbow last year was baked in foil with olive oil and bagel all spice.
