I work with carp, I nearly crapped myself when a 2000 dollar koi I was bagging all of a sudden turned the water in the bag blood red, beleive me, it was a very awkward situation for me approaching my boss telling him I think I hurt a fish, only to learn they do it when the stress.

When stressed, carp release blood from their gills.

Can of tuna costs .99 cents and you can get tonnes os scent from that... not sure how well it works but it is stinky scent. I second cat food, observing doughbaits made here at my house, my dad used fish flavoured cat food( dry bits ) which he'd soak over night into a "mash" and work it into the dough bait.
