Thanks again, I always appreciate your input. I'd love to spend a day fishing with you some time, being a butcher sounds like a really interesting profession, it would be fun to hear more about it. -
My comment "You need to be a refuge they will come to you and take care of everything for you!" was in referance to the fact that our government was meeting refugees on arrival and supplying them with SIN numbers, Health Cards, Drivers Licenses........ on the spot! Anyone that thinks I am racist hasn't taken the time to know me at all. I have close friends of many nationalities, religions, and sexual orientations (among other things) and I treat each and every one of them with the love and respect they deserve. Am I anti government? Well, I'm anti anything that bullies people and I do believe that we are being bullied more by the current government than ever before and I'm not afraid to say it publically. To TO angler, you are 35, I am 70, I've lived and worked two of your life times already, is it possible I might know something you don't? I hope you'll stick around it wouldn't be any fun if everyone on here always agreed with me.

Perfect, that's what I needed to hear, the butcher that I deal with gave me a couple of slabs of fresh pork fat, I usually render it down and use it for making bread and things but I was thinking I'd like to make some salt pork up for when we make pork and beans or scrunchions. I just wasn't sure how long to leave it in the salt. I have a chunk in the fridge in a ziploc bag imersed in coarse salt that has been there for about a month. Guess it should be good to go now! -
Dang guys (and gal) thank you all so much! I never in my wildest dreams thought I get to see 70 never mind still be able to put in a 14 hour work day (on my birthday no less LOL).

Want to make a road trip? I'll give you my cold smoke generator, all you'll need is an aquarium pump. I can just build another one in the spring. -
Gave up doing my own taxes years ago when I guy that could barely speak English told me that "in his opinion I didn't need a computer to run my business" and disallowed my claim for the computer and supplies and cost me over $1800.00 + fines. Ever since then I have used an accountant, they always find things that I either wouldn't have known about or wouldn't have figured out, besides the cost is also a tax deduction . I have never had a problem since, I usually get money back, they automatically file for any subsidies that I/we might qualify for, and I almost always have my refund back in my bank account within 10 days. Works for me!

5 days, 7 days, a matter of preferance, the extra 2 days isn't going to draw out much more moisture and will make the bacon dryer. I wash then pat dry and put it back in the fridge 4 hours, 12 hours, 48 hours isn't going to make much differance, you are just allowing the surface to form a pelicule (sp) which seems to allow the smoke to adhear better. If you put it in the oven after that until an internal temperature of 150 then you are just pre cooking it. Some people do it that way, I tried it and didn't like it so now I just cold smoke it and cook it when I take it out of the freezer and put it in the pan (just the same as I do when I used to buy bacon). It's mostly about personal preferances like some people like corned beef, some people prefer Montreal smoked meat. -
You need to be a refuge they will come to you and take care of everything for you! If you go to the drive test center in Lindsay be ready to wait for a long time. I went in a couple of weeks ago just to get my license updated with my airbrake endorsement. Got there at 8:30 and was first in line. They opened the doors at 8:50 and when I got up to see the girl at the desk I was told I had to go over to the kiosk (which only opened at 9:00) and take a number. She then processed over 50 people from out of town while I waited. When she had processed all the people that were there for their drive test finally at about 9:45 my number got called, by 9:50 I was done and heading out the door. Good luck with it Beans I feel your frustration!

Shortly after coming into this world I wore a diaper and couldn't wait to get out of them! I have worked hard all my life so that I could hold my head high and make my family proud of me. The last thing I want in this life is to go out laying in a soiled diaper and to have my family know how much it hurts me to have them see my helpless like that. Wynne loves to grandstand on our dime, cut Dr.s wages and services to seniors but piss billions up against the wall on stupidity! What I can't figure out is how that moron even got elected, no one I have talked to seems to have voted for her! -

Once cured and sliced I freeze my bacon on a cookie sheet on parchment paper in individual strips. Once frozen I put it into a ziploc bag and remove as much air as I can. Then when I want bacon I can just remove as many strips as I need at a time. -

I have used this recipe several times now, it's a very basic one which is what I was looking for. I cold smoke mine (no heat) and have tried several different types of wood and different lengths of time, my favorite is maple for about an hour. I wanted to stay away from the nitrates (pink salt /cure #1) because I'd heard a lot of bad things about them. I use either coarse pickling salt or coarse sea salt to stay away from the iodine in table salt. -
Apparently not any more Beans, it seems waiting times to get in were way too long. The last thing I am looking for here is any sort of "revenge" (for lack of a better description) but I am already out of pocket a couple of hundred bucks with more to come. If there is some compensation available I will sure help! I would think they would be very foolish to scrub them after someone my age went down so hard. I would think they would want a record of it just in case.

Jan. 2 we had 6 swans swimming on Sturgeon Lake in front of our house. As of yesterday you couldn't see any open water from our place. I wouldn't even think of trying to go out on that ice!!!!!!

No, no one asked me to sign anything. Never thought about them having a vidio of it, I'd love to see that one because I know I did some awesom aerobatics on the way down LOL. All I could think of was not hitting my head. I was pretty shook up at the time and almost embarrased by the whole thing.

Thank you for that very kind offer, I ended up getting a knee brace today and while it is uncomfortable at least I can get around now without the fear of stepping off into nothing. I even managed to get out and clear the bit of snow that was on the deck. I should be ok. I wasn't thinking of suing them at all but I am out of pocket almost $200.00 already with the cost of parking at the hospital, the knee brace......, I went to see my Dr. this morning and she is refering me for Physiotherepy (I don't have coverage) and to see an orthpedic surgen. We'll see where all of this goes and I may ask them to cover my out of pocket expenses. Easy at this point, fall in, fall out When it happened I was following one of their young sales people down the isle and suddenly I was on the floor. Once they got me a chair and I caught my breath I showed the supervisor the string of puddles on the floor and you could even see the one I had steped on as it was smeared. She went and got signs and put them up right away then went looking for a mop. Someone had obviously walked down the isle with slush on their boots. I don't know if you could call that negligence on Staples part? Hospital just called, MRI Feb. 1 plus I am on the list if there is a cancelation. That's not so bad I guess.

No, I guess that's what the MRI will do but apparently I could be waiting for a long time to get that.

Well, the New Year is off to not so good a start. Last Thursday I was in Staples here in Lindsay and slipped on some water in one of the isles and went down rather hard. The supervisior was wonderful, rushed over got me a chair (it had knocked the wind out of me) she offered to call an ambulance, get me some water.... after a couple of minutes and being allowed to catch my breath I just wanted to finish my shopping and get out of there. Friday I stopped in just to thank her for her kindness and let her know that short of being a little sore I didn't think there was any serious damage, she seemed very relieved! Saturday I was coming out of my garage and I was suddenly on the ground, I had no idea what had happened it was all so fast. At first I thought I must have slipped, I managed to get myself back up onto my feet, went to take a step and I was back on the ground again, it's like my leg wasn't there. Fortunatly I had a couple of friends here and they helped me get back to the house. Sunday morning my knee was throbbing and I was afraid to even try to walk on it, when it had given out on Saturday there was no warning what so ever, it just buckled. (an old fat guy like me falling down isn't a pretty sight) I did manage to find an old cane we had here from years ago so I hobbled out to the car and drove my self to the hospital. They checked me out, did xrays, The Dr. said it looks like the tendons in my knee are torn and they need to do an MRI to determine what the next step is. They fitted fitted me with a leg brace (then told me I can't drive with it on) and sent me home. The worst part of the whole thing is prior to falling on the ground there was no pain or anything to indicate there was even a problem. Even now, the pain isn't really bad but I am almost scared to walk for fear that knee is just going to buckle again. What a good way to start off 2016

I am going to have to try that on snow blower and lawn more cables that seize up, would sure be a lot less expensive than having to replace them.

That is wonderful news, sounds like this could be a happy New Year for all involved! BTW, a piece of plywood probably won't be enough if she goes into heat. I have seen dogs eat their way through doors and walls when the time is right.
