  2. Round 3. Chicken thighs marinated in lemon and coriander. Indirect for 40 min at 300. Over to the hot side,basted,flipped,basted and serve. My chicken lover is over today and I got the thumbs up. 😆
  3. Thanks. There was enough fat top, but I will give it ago next time. I have seen some briskets here,but all whole and the price was not cheap. They will be out again here in a month . I may just have to bite the bullet and get a whole one. Vac pac one half. Not a big fan of smoking meat that has been froze. Different out come IMO.   5. I have this going 5 hrs now. Sirloin butt. Using the snake method with apple chunks. Just wrapped now and another 2 hrs at 250 deg. While that's been going, been busy with a spring order.
  6. Thanks Doug If I do them again,I will do a step by step ,but you can google them. Like I said,bit of work,but delish. I think I might drizzle some maple syrup, instead of home made bbq sauce.
  7. Donuts anyone? These are ground beef onion ring bacon wrapped donuts. Indirect for 2 hours at 250,with apple chunks for smoke flavor. A few mini meat loafs for mama just encase she did not like the onion. Seems I could of saved the meat loafs,she liked. I used sweet onions. Fresh peppers and left over onions wrapped with just pepper and salt. No butter. Just melt in their own juices. The donuts are a bit of work to form. Stiill delish.

  10. Made a trip south. Hit all my fav meat markets and a couple others. Bought the Podhalanska sausage at Starskys on Dundas west.

  13. Ya,the temps drop like a stone here It,s not over yet. Crazy winds and down pours. Temps dropped so fast while I was outside watching and got goose bumps. The sky is not black or grey,it,s green and thunder is going off like cannons. There has been some lighting,but it seems to be sheet.

  16. Fishing in Canada vs fishing in the USA is a whole different thing. I do not know if it is mind set or the amount of fishing or the amount of people that love fishing. I am on many fly fishing sites on FB. Guess which has more? USA. Those guys down there are right into it. Up here,I have found a handful and they are not that great. Yes, there are the east coast and west coast ones,but in the USA,they are everywhere throughout the states. This is why BPS and Cabelas and small stores thrive down there and not up here. I was peed off when Sails closed in Vaughan. They had a much better selection then BPS. And YES, ONLINE shopping is killing small shops here. I have finally got on the online shoppping. Lots of my supplies come from BC and some from up in northern ont. I have even ordered from Montana now,as I cannot get a better price for my leg material for my bugs.
