Make sure the bird is thawed and fairly dry. Use a broomstick or such to drop it in slowly at first. I use a temp probe with a silicone coated wire that gives an accurate temp while in the fryer. Tried the 3min/lb but had differing results. the probe works great.

Years back when there were smelt and I was in college. The local tradition was to bite the head off the first one caught. One year in the middle of a big run a guy dove in to get his smelt and came out with a fair sized steelhead. Took him quite a while to accomplish this feat and nobody told him it wasn't a smelt.
