Doing the you tube search, I could not find where it says how many times I should fill the wood chip pan. I have only seen where guys do it 2 times, 1 hour each, then let the fish cook for the rest of the 5-6 hours. Do I want the smoke going through out the full cook?
One thing I have found out for sure, strikly dry wood, no mixed wet/dry.
This came up in a classified ad. I could not, pass on it.
Now to some whities next weekend and looking forward to some fall smoked salmon and steel head.

My young one wanted to help make her own scrambeld eggs. She loves her scrambled eggs and katcup . I let her crack and whisk. She then began to give me orders on how to fry and flip. I said you do not flip, you stir and fold. Well I got the , let me show you how. She did good.

From what I seen from that very short clip, that was a direct shoulder to the head. No blowing through the other shoulder.

The wind and the super gusts of up to 100 km so far is crazy. The CTV tower wires sound like a 747 is just outside here. Calling for even stronger gusts up to 115 km this evening.
