It,s a learning curve for me. Need to get out there and get me a couple more to smoke again. I have read where guys have built a plywood box to cover the smoker. I had a sheet of steel covering the breezy side, which in turn, blocked the sun from helping with the heat thing. I smoked for 1.5 and cooked for a total of 5 hrs. I found the thicker pieces on the middle rack , they were a bit soft still. Lower rack next time.
Kenzy did mention I might want to swap out the burner that is in it, and put one of those stove top burners to have better heat.
Hence why I am making fish cakes brother from this batch.
It was done sooner then I thought, BUT, It is very salty. I used sea salt, not pickling salt.
MISTAKE ?
There was a hint of smoke flavor. It smoked for 1.5 hours. Only did one pan 3 hand full of chips.
The taste and texture,was like salt cod.

My favorite fish season opened again today. White fish. With the new to me smoker SCREAMING OUT, I could not ignore.
Fish are in Brine of , water,sea salt,soya sauce and lots of pepper. Will smoke Sunday.

A few years back, this was a common thing here. Crappie would come in and well, you know what follows. So crappie in a pail and yes small mouths. Me and a buddy would walk the small docks that you had to squeeze through the traffic on. Oops sorry, didnt mean to kick your bucket. Yup, they sure do get pissy. LOL OH WELL.
These days, I have no issue confronting. There has been enough effort put forth for all to know what is legal to catch and not. There is enough social media now to show

He,s talking $160. That is a great deal for new. And it,s not going to break the bank. I started out low end pin then worked my way up. All but 2 of the 5 were used, Starting out. The slightest wobble or even a nick on the spool is very annoying. Thats why I say for him to buy new is best.
Yes, but if you do not know what to look for , then I would say he will do fine with the new one. If he drops it, he has only himself to blame, not the guy he bought it off of. Im not saying all sellers are rip offs, but why chance it. JMO
I can tell you there is still 28" on the lakes in Port Loring. I only know this as buddy wanted to get his boat up there this weekend. LOL Aint going to happen for a couple of weeks.
