Paddle Bait Rigging

For you guys that use large paddle baits (10"-12") how are you rigging them?

Trying to figure out the best way with these gigantic things.

I usually run a fly 18" to 24" behind mine.

Down in Florida I have seen them hook them weedless Texas style with a very big bait holder hook. Tossed and jigged back or vertical off the piers for Snook or cast for Largemouth, they call Florida Bass, same fish.
