Use them all the time on a quick strike rig, the bigger the sardine the better in my experience. I hang them a foot or so off the bottom, head down.

I'm looking for large frozen Sardines or Herring for my spring trip to Canada --- any idea where I can order them and have them shipped to me?

You could get one of the Canadian sellers to ship to your fishing location/lodger/outfitter etc. or have a US dealer ship to you as it sounds like you're South of the border. ;)

I've used them with a quick strike rig as mentioned. I have also let them lay on the bottom. Seems to target larger pike either way. I've only used them ice fishing on a tip up. Not sure how well they would work in open water.

Why not just pick some up at the local grcery store like I do? If you ask your outfitter, I'm sure they could make sure they were on hand when you get there.
