We use to dry out the cod fillets on a mesh screen in the sun with lots of salt.Made for great fish cakes come the winter months. Oh yeah,Simcoe Bob does make a great smoked white fish.Sampled,well devoured some at the Oro 7 G2G a couple years back. BTW wheres that spell checky thingy?

Hey Simcoe Bob,you are right,your smoked white fish is awesome. Tried it at the oro station G2G acouple years back. I have only salted cod and dried it out on the screen mesh down home.Never smoked any. Are you hanging them to be smoked,or are you keeping them whole and on a rack?
