  12. Can't be charged with speeding as there is no speed limit on the lake (30 meters from shore) In most provinces there is a 10 kph speed limit within 30 metres (100 feet) from shore. Fine is $125. Maximum fine is $500 or six months imprisonment. (Canada Shipping Act: Boating Restriction Regulations)... but because there are people out on the lake, vehicles, shacks ETC a "dangerous driving" charge was the call, and thats exactly what it is, A judgment call by the officer. I actually just went over this with an Officer of the Totonto Peel detatchment at the Toronto Boat show last month

  15. www.smoked-meat.com I'm also "butcher" on there, navigate to "fish" and look for my post "cold smoked salmon start to finish" and there are many posts by other guys that are very good in smoking fish / meat... This was my "livleyhood" for many years (educated in the trade, grad of Vancouver Community College) i still butcher / cure and smoke meat at home i would not recommend using Nitrites unless you have an understanding if how they work and the advantages / dangers
  16. Ill post some when im home tomorrow, do ya know anything about curing with curing salt? ( nitrite)
  17. Best way to make jerky is with a dehydrator. the best unit (still inexpensive) is one that has a fan motor in side, this helps with the drying of the meat, you will still have to rotate the trays though, leaving the midle in the middle, and top to bottom. what are you using for a marinade?
