  2. Sometimes it's the simplest things that are the most enjoyable. Last week I picked up three loaves of half price fresh bread from the reduced rack. Yesterday they got cut up into big chunks and into the Big Chief for 4 hours and 4 half full pans of pellets. Then they go into the food processor and we get a good pile of smoked bread crumbs that we use a lot for many dishes, there is no comparison to store bought. We separate into bags and freeze them, they keep very well. Here's what they look like coming out of the smoker, the kitchen smells great.

Well, back somewhere in the last 153 pages...............😉 I use this commercial product: https://www.stuffers.com/products/stuffers-bacon-dry-rub-cure-1kg Cut the t-loins into pieces about four inches long, and put the pieces Into a covered tupperware container. Sprinkle with the cure at about the amount suggested per kilo of meat. (Maybe a hair less) Turn the pieces with a fork so you get cure on all sides, cover, and into the fridge. Every 12 hours or so, rotate the pieces about a quarter-turn along the long axis. Leave in the cure for at least 48 hours, 72 is about right. Rinse the t-loin pieces with cold water and pat dry. Sprinkle liberally with brown sugar, on all sides, pressing the brown sugar into the meat. Let it sit out about an hour to set up, then into the smoker for two pans of maple chips. Last time I was out of maple and used cherry, still turned out excellent. Slice it about 1/4 inch thick and pan-fry. Because it is VERY lean, I put a little bit of bacon fat or margarine in the pan when I cook it. It also freezes very well.

  4. Made a few Quiche Pies last week for a couple of friends, I managed to keep one for myself. It was pretty damn good. Two were Ham and Broccoli and the other two Bacon, Mushroom and Onion.

  5. Dear all While I appreciate that carp fishing is not for everyone, it is fast becoming a popular sports fish in both Canada and The States. I have been carp fishing for 30 years. Needless to say - I love it! I hope that it is acceptable to share this here. I have just been voted in as State Chair for Ontario for the Carp Anglers Group (carpanglersgroup.com), and have a huge to-do list. Right off the bat, I was asked to create a Facebook Group page. This group page is set up and will include - Carp Anglers Group - Ontario Agenda. In no particular order: CAG member (and guests) Fish-In (2-3 a year). Promote CAG and its membership. Junior Fish-In and teaching days. Local meet ups. Meetings/contact with local press to promote carp fishing. Maintain contact with MNRF regarding multi line (2 rod) fishing for carp. Despite 2020 being a complete $hit show, I had some fun out there on the water. was a later than normal open water season for pike but we did well teaching the young lads how to fish for spring pike. Explaining the finer points of jerkbaits to the kids it was fun watching them hone in on their new found skill. bass fishing was hit and miss for me this year. I fished a total of 8 new lakes this summer which took up most of my bass season. Some a complete waste of time, some still on the radar for further exploration next summer. My typical late season largemouth trips went right up until November 22 and may extend to one more trip. Possibly a couple trips to the mighty Niagara coming up soon but with the borders closed and no drifting allowed on the US side I may focus back on pike to round out the season.   8. Pork t-loin makes the most excellent bacon, I call it bacon candy. "THEY" said you can't make bacon out of tenderloin, well you most certainly can! And it's delicious! Doug

  9. Thanks for all the kind replies guys. 2020 has definitely been a roller coaster ride. Old Ironmaker said it best. We should be very thankful for what we have and appreciate and be grateful for all the little things. I have for sure put my time in and am very proud of some of my fishing accomplishments this year and hope you guys appreciate the fish porn. Had some more pics to share but couldn’t load fir some reason. Maybe next time. Let’s hope for a great 2021

  11. You might be thinking of those Instant Pot electric pressure cookers ? I've got a couple, they do a cheap cut of roast beef to pot roast fall apart tender in a hour, same with pulled pork and baked beans from dry beans ( no presoaking ) in about the same. Though it may be a sin to the smoker guys here, they will do aa couple of racks of ribs in 22 minutes with a finish under the gas broiler with BBQ sauce for a quick rib fix.

  14. On the suggestion of my then BIL chemist that worked for Proctor and Gamble we slathered the dog with Crest toothpaste, let it dry and brushed it out. Thank goodness most of my in-laws worked at P&G and the toothpaste was free. That was after we spent way over 100 bucks on useless stuff from the Vets and more on tomato juice. I felt terrible for poor little Farah our Stafforshire Terrier also known as a Pit Bull to those not educated in the breed, a big Staff male is about 45 pounds, an American Pit Bull can go over 100 pounds. They are certainly related though and get a terrible reputation. She got it right in the eyes and her eyes were red for days. She was never let out again until I knew the coast was clear. My wife worked with the public then and missed an entire week because she smelled like a skunk. Crest tooth paste worked on her as well. I just smelled like Blast Furnace gas like I normally smelled. We had the insurance company to the home the next day. Had the place not been less than a week old most if not all of the soft materials that was in her path i.e carpet, furniture etc. The bedding went right in the backyard that night. Had the place not been brand spankin' new, we were in the home less than a week, the insurance guy had no idea what could be done. It would have been big money. The smell was actually gone in a few days. I don't remember where we spent the night, I do know my wife spent a week at her parents airing out. Another waste of $$$$. (edit: don't know why that's in here but it fits.)Crest tooth paste, who knew. Now I know about peroxide, baking soda and Dawn. The pic looks like Farrah the Dog but she didn't have male body parts like in the pic. Did it's fur turn white from the peroxide Akrisoner ?

  15. Yup,splake and white fish at the same spot out from the mouth of the notty in the mid 70,s and up to the late 80,s. Now all gone. Very nice coloured fish there.

  18. The lake went through huge changes and storm surges back in the 70's. I remember, as a teen, watching the news on TV showing cottages falling off the shore on L Erie. Big storms and high waters were the culprits back then as well.

  22. Brought back a lot of good memories. As kids we could not wait for spring to hone our fishing skills battling 20 lb+ carp at Cootes Paradise in Hamilton Ontario. Preparing corn meal balls and getting all our old tackle together, as we knew we would lose line, sinkers, and sometimes rods. Those were fun days and yes Carp was a fun fish to catch.

  23. I have saved hundreds if not 1000's of dollars because of this lockdown. As I no longer drive by PA like I did before I don't stop each and everytime no matter what town I'm in and buy stuff I don't need or even know what it's for at times. I think I have about 75 ratchet straps, most still in the package. I have never driven by a Princess Auto, ever, including Nova Scotia a few times.
